1/3 of a 6oz package, peeled, cooked tiny shrimp (2/3 cup)
4 pitted ripe olives, thinly sliced
1 small tomato, seeled and chopped (1/2 cup)
2 Tbsp. toasted pinenuts or slivered almonds
1 Tbsp. snipped fresh basil
2 tsp. capers, drained
3 eggs
3 Tbsp. water
1/8 tsp. salt
1/8 tsp. pepper
1 Tbsp. margarine or butter
2 oz sliced Provolone cheese
Sliced green onion and chopped tomato (optional)
Run cold water over shrimp in colander to thaw. Drain; pat dry. Stir together shrimp, olives, tomato, nuts, basil, and capers. Beat eggs, water, salt, and pepper with a fork till combined. In a nonstick 10 inch skillet with flared sides, melt margarine. Tilt pan to coat sides. Cook eggs in skillet over medium heat withou stirring. As eggs set, run a spatula around the edge, letting uncooked portion flow underneath. When egss are set, but still shiny, remove from heat. Top with cheese; spoon shrimp mixture onto one-half of the omelet. Fold omelet in half; heat through over low heat. Cut omelet in half; tranfer to plates. Sprinkle with onion and tomato. Serves 2.

2 Tbsp. all-purpose flour
1/4 tsp. salt
1/8 tsp. pepper
1/4 cup snipped fresh basil or 1 tsp. dried basil, crushed
1 cup milk
Nonstick spray coating
4 eggs
salt and pepper
1/4 cup shredded mozzarella cheese (1 oz)
snipped fresh basil (optional)
In a small saucepan melt margarine or butter. Stir in the flour, 1/4 teaspoon salt, 1/8 teaspoon pepper, and dried basil, if using. Add milk all at once. Cook and stir over medium heat till thickened and bubbly. Cook and stir 1 minute more. Remove from heat. Stir in fresh basil, if using. Spray 4 8 or 10 ounce round baking dishes or 6 ounce custard cups with nonstick coating. To assemble, spoon about 2 tablespoons basil sauce into each dish. Gently break an egg into the center of each dish; season with salt and pepper. Spoon remaining sauce atop eggs. Bake in a 350░ oven for 18 to 20 minutes or till egg is set. Sprinkle with cheese. Let stand till cheese melts. Garnish with snipped basil, if desired. Makes 4 servings.
